SUSHI - HISTORY
Sushi is a Japanese food consisting of cooked vinegared rice combined with other ingredients, seafood, vegetables and sometimes even tropical fruits. Raw fish (or occasionally other meat) sliced and served without rice is called sashimi. Sushi is often served with ginger, wasabi, and soy sauce.
The origins of sushi lies in de preservation of fish by letting it ferment with rice, which at the beginning of our era became a common practice in Japan, where at the beginning of the seventeenth century one started to consume the rice along with the fish while the fish wasn't fully fermented yet. As more and more Japanese could afford fresh fish, rice vinegar was added to mimic the slightly sour taste of the partially fermented rice.
Sushi began as street food, but thanks to the rich variety of fish in the bay of Tokyo and the artisanal attitude of Japan, it has grown into a world wide delicacy that we know today. It was in the beginning of the nineteenth century in Tokyo where the present form of sushi took shape, with different kinds of fish, seafood, vegetables and seaweed, together prepared as a small, dainty snack. At the beginning of the twentieth century sushi started to spread across Japan and in the second half of the twentieth century across the globe.
